Eggs with Spinach and Pine Nuts – Skillet Baked
Breakfast is the #1 meal – Start your day with Protein Rich Breakfast.
Usually people are always in hurry and forget about breakfast which is most important meal of the day if you ask me.
I’m not going to talk all day long about this, I would just like to say that all you need is to get up 15 minutes earlier in order to prepare and enjoy this protein rich breakfast.
It is up to… I know what I’m going to do first when I wake up.
- 2 eggs (you can use more)
- Handful spinach
- ¼ cup Pine Nuts
- 1 Tablespoon Coconut oil
- Heat the skillet with coconut oil.
- Put in the spinach.
- Crack those eggs on top of spinach.
- Cover the skillet and bake until eggs are done the way you like.
- Season everything with pine nuts (also add some salt and pepper if you prefer it that way).
- Serve and enjoy your meal (I usually serve it directly from skillet)!
